Winter Squash (Cucurbita maxima)
Winter squash are robust, vining plants known for producing large, nutrient-dense fruits with hard outer skins. Unlike summer squash, these varieties are harvested when fully mature and can be stored for several months. They are an excellent source of Vitamin A, fiber, and potassium, making them a cold-weather kitchen staple.
Companion Planting:
Winter squash grows exceptionally well near corn and beans (the classic “Three Sisters” method). The large squash leaves act as a living mulch, shading the soil and preventing weeds. Avoid planting them near potatoes, as both are heavy feeders that can compete for nutrients and may be susceptible to similar soil-borne diseases.
Care Tips:

Planting: Sow seeds in full sun once the soil has warmed up completely. They require plenty of space for their long vines to roam.

Watering: Provide deep, regular watering at the base of the plant, especially during dry spells. Avoid wetting the leaves to prevent powdery mildew.

Support: Most Cucurbita maxima varieties grow on the ground due to the weight of the fruit, but smaller varieties can be trained up a very sturdy trellis.

Harvesting: Harvest in late autumn before the first hard frost. The rind should be tough enough that it cannot be punctured by a fingernail, and the stem should be dry and shriveled.
Fun Fact: This species includes some of the world’s largest pumpkins, with competitive “giant pumpkins” often weighing over 2,000 pounds!
