Dārza Cress (Lepidium sativum)
Dārza cress is a lightning-fast growing leafy green known for its refreshing, peppery bite. It is one of the easiest edibles to grow, often sprouting within 24 hours and reaching harvestable size in just a week or two. Packed with Vitamins A, C, and K, it is a popular “super-green” used to add a spicy kick to sandwiches, salads, and soups.
Companion Planting:
Dārza cress grows well near radishes and onions, as they share a love for cooler temperatures and moist soil. Because it matures so quickly, it is an excellent “filler” plant to grow in the spaces between slower crops like tomatoes or carrots. Avoid planting it in dry, scorching spots near heat-loving Mediterranean herbs, as cress will quickly bolt (go to seed) and become bitter.
Care Tips:

Planting: Sow seeds thickly on the surface of moist soil. They do not need to be buried deep. In the garden, they prefer partial shade during the heat of vasara to stay tender.

Watering: Keep the soil or growing medium constantly moist. If garden cress dries out even once, the delicate stems will wilt and the flavor will turn unpleasantly sharp.

Support: No support is needed. The plant grows in dense, low-growing clumps or as delicate individual stalks.

Harvesting: Harvest with scissors when the plants are 5–10 cm tall. It is best used fresh immediately after cutting, as the delicate leaves wilt quickly.
Fun Fact: Dārza cress is so determined to grow that you don’t even need soil—it can be easily grown on damp paper towels or cotton wool right on your kitchen windowsill!
