Amaranth (Amaranthus)
Amaranth is a striking, ancient crop prized for both its nutritious seeds and its vibrant, edible leaves. Known as the “gold of the Aztecs,” it produces spectacular, plume-like flower heads in shades of deep red, purple, and gold. It is a gluten-free powerhouse, containing high levels of complete protein, fiber, and essential minerals like manganese and magnesium.
Companion Planting:
Amaranth grows exceptionally well near corn and peppers. Its tall, sturdy stalks can provide a natural windbreak for shorter plants, while its shade helps keep the soil cool for potatoes. Avoid planting it near heavy-vining gourds like large pumpkins if space is tight, as the vines may eventually climb and weigh down the amaranth stalks.

Planting: Sow seeds directly in the garden once the soil is warm. Amaranth is a heat-loving plant and will grow rapidly during the height of summer.

Watering: Provide regular water while the plant is young. Once established, amaranth is remarkably drought-tolerant and can thrive even in hot, dry conditions.

Support: Most varieties develop thick, woody stems that do not require staking, though exceptionally tall ornamental types (reaching over 2 meters) may need help in very windy spots.

Harvesting: For greens, harvest young leaves when they are tender. For grain, wait until the flower heads are dry and the seeds easily fall out when rubbed between your fingers.
